Fall is a great time of year for all kinds of apple recipes and this soup is a bit different, with the addition of curry.
Now I’m off to take a nap. I don’t “do sick” often or well. :<(
One of the many pleasures of fall are the beautiful ‘fresh from the orchard’ apples that are now available. Of course they don’t last long before starting to lose their crisp and delicious texture so must be used up fairly quickly.
In addition to making apple: pies, butters, crisps and good old baked; this is one of my favorite ways to use up some of the abundant fall crop. Tangy colorful and something a bit different for supper or lunch. Hope you will enjoy this luscious soup soon.

I’ve been making a variety of favorite soup recipes lately. It’s great to get back to cooking after the long, hot summer.
I’ve said it before, I’ll say it again. I am NOT a hot weather person.
I thought I’d share a collection of some of my favorite soups today.
I’ve included photos and links back to the original posts that include the recipes and readers comments.

I don’t know about where you are, but here in Interior BC it’s COLD again! 😦
It was down to 1C late afternoon yesterday. For here, at this time of year, that is very cold.
I’m making a lot of soups as we wait out this current weather.
This is one: Slow Cooker Red Lentil, Chickpea and Coconut Soup, that I found over at the Kitchen Treaty blog. It’s nice and hearty. Full of healthy and delish ingredients and made in the slow-cooker. Can’t get much better than that.

My photo above is an “action shot”. Look closely, you can see the steam rising and the soup bubbling. 😉
A few minor changes I made:
-I used 2 T. olive oil instead of butter
– 3 C. of pre-cooked chickpeas instead of canned type. Next time I’d cut back on the chickpeas, 2- 2 1/2 C. would be plenty IMO.
-I cooked soup on HIGH for 4 hours, instead of on LOW as the recipe is written.

I love root veggies of all kinds. Turnips, potatoes, carrots…but most of all I ♥ beets!
Last week I made a big batch of my favorite soup (pictured above) Russian Beet Borscht from my cookbook: Not Just for Vegetarians. Along with it, a yummy loaf of Rye and Fennel Seed bread, a new recipe I just created. I can’t share that one ’cause it’s one I’m including in the new cookbook I’m working on. 😉 Speaking of that project, it’s going great!
But I can share my recipe for the borscht, if you haven’t tried it already.
