On the Menu: Potato Scones

These scones are my favorite way to use up leftover mashed potatoes.

So yummy and delish!😊

I made a batch this past week to go with soup for supper. No leftovers after that.😉

This has been a popular recipe download for years, here at Veggies….

These scones are absolutely delicious, melt-in-your-mouth good!!!😊

I have now tried them as a vegan-friendly version, after being inspired by a post on the popular mainstream cooking blog:  Pinoy Cookthat featured this recipe and some gorgeous photos too….

I have included options for making them sweet or savory, vegan or not. I hope you will enjoy them too. I look forward to hearing about your results. PS Please excuse the less than pristine albeit clean, oldie but goodie…. pizza pan in my ‘action shot’  it actually looks worse in the photo than it is !.

I know a lot of you already have this cookbook and I hope you’ve enjoyed these particular recipes too! 

I had an abundance of peppers (this soup requires 2 large ones) and some leftover mashed potatoes (for the scones) in the fridge this morning, so this menu combo from the GGK came to mind.  Comfort food at it’s best.

Yummm…can’t wait!😉

In my kitchen, I create.
Breads to rise and cakes to bake.
Here, I stir, knead and sauté.
Spoons and knives, in happy disarray.
                                        
In my kitchen, I am queen!
Baking cobblers, date bars and other sweet dreams.
Soups and salads, lovingly prepared.
With a smidge of spice and a dash of flair.
                                                                                                   
Blissfully, I’m lost….
in heady aromas and tastes.
A world of flavors.
and delights to partake.
                                                                                     
I am home.
Oh so free.
This truly is, where I am ME!
                                                                                   
The stress of the day is left behind.
It’s time to create.
All problems resigned.
                                  
Pity those who can’t boil an egg.
Seeking culinary skills.
They will often beg.
                                                 
The chemistry of cooking.
A wonder to share.
It’s almost like love, but with calories…
oh dear!
                                                         
In my kitchen, safe and warm.
A haven…
flour heaven ?
So glad to be here.

On the Menu Tonight: Black/Turtle Bean Soup with Cornbread Scones

It’s another cool, grey, rainy day here in Interior BC.

I’ve got lots on the go with projects this weekend so I  decided to make a nice big pot of Black Bean Soup with Cornbread Scones for supper, so easy and delish.

Here’s the recipe for my version of this classic bean soup. It’s a little bit spicy and oh so satisfying.

And a perfect warm-up dinner on a day like today.

The Cornbread Scones are a new recipe from my upcoming cookbook so that one, I can’t share (yet)! 😉
