Hate Fruitcake? Here’s a Yummy Alternative.
I am NOT a fan of fruitcake, never have been, never will be. 😉
But this time of year, it is nice to have some fruit loaves on hand for guests, especially when they stop by  unexpectedly. Loaves can be stored wrapped in the fridge (some also freeze well) for at least a couple of weeks, without losing flavour or their texture being affected.
This loaf is from my cookbook: Cranberry Mandarin Christmas Loaf and it’s been a popular recipe since: Not Just for Vegetarians first came out. Lush with fresh cranberries, pecans or walnuts and mandarin orange juice and zest. And not too sweet either, just right!
Not only does it taste delish but the aroma when it’s baking just says Christmas!
