Are You Drowning in Pumpkin Puree? ;-)
I JUST ♥♥ PUMPKIN, ANYTHING (pies, cookies, soups, muffins)… ! 😉
And this time of year, it seems like there are pumpkins and pumpkin recipes everywhere.
Last week, I was looking for a new recipe for a muffin that would include not only pumpkin, but dried cranberries and pecans too.
I found this oh so yummy one over at the Betty Crocker site for:
Pumpkin Cranberry Muffins (click for recipe)
They turned out great. A lovely dense but moist texture, flavorful and colorful too.
A couple of tweaks:
I did cut back a bit on the sugar, used unbleached flour and added a dash of cloves and nutmeg to the dry mix too.

Last year I was obsessed with eggnog. This year I’m obsessed with cookies.
So when I was asked to be a part of a healthy christmas cookie round-up that Sandra from Candida Diet Plan was organizing, I was pretty excited! Cookies and a Thanksgiving Wish
***WITH THE U.S .THANKSGIVING COMING UP THIS WEEK, I THOUGHT IT WAS A GOOD TIME TO REBLOG THIS POST FROM A FEW YEARS AGO.***
I THINK IT’S SO IMPORTANT THAT WE TAKE A TIME OUT NOW AND THEN, TO REALLY DWELL ON ALL WE HAVE TO BE THANKFUL FOR IN OUR LIVES.
AND ALSO, TO THINK ABOUT ALL THOSE PEOPLE IN NEED AND TO HELP OUT AS MUCH AS WE CAN.
HAPPY THANKSGIVING TO MY U.S. FRIENDS AND HAPPY WEEK TO ALL. :<)
I’ve been on a bit of a ‘cookie-crave’ lately, don’t know why but I hope it’s not permanent LOL.
For the most part, desserts of any type are one food ‘group’ I can usually resist. Exception: chocolate, of course. But then, that kind of goes without saying, right? 🙂
So, what’s the best answer if the Cookie Monster comes to call LOL!! Make cookies with lots of nutritious ingredients, natch.
These Kid’s Choice Cookies from my cookbook: Not Just for Vegetarians and are chock-full of goodies and lower in sugar than most ‘kitchen sink’ type cookie recipes I’ve tried in the past (recipe to follow at the end of this post). Do let me know if you give this recipe a try!!!
I made this batch yesterday with dried cranberries instead of the usual raisins, in keeping with the Thanksgiving spirit.

Oat Bran Blueberry Muffins
I haven’t posted a recipe in a while but I HAVE been cooking and baking a lot. 🙂
Today is no exception. On the menu: Slow-Cooker Veggie Beet Borscht (new recipe from my upcoming cookbook), Bread Machine Rye and Fennel Bread (also from my upcoming cookbook) and Pineapple Cupcakes.
I’m getting hungry just typing this LOL. 😉
I’ve also been on a bit of a “muffin kick” .
I bought some wonderful organic blueberries at our local food co-op recently and made up a batch of yummy blueberry muffins.
These are from my cookbook: Not Just for Vegetarians and they include the goodness of oat bran in them.
Adding coconut to top them is an idea I got from another muffin recipe. You can skip this step if you don’t like coconut. But it does add a nice crunchy topping, without the calories of streusel- types of toppings, with extra sugar, butter….
