Chickpeas: What’s Not to ♥ ♥ ♥ !!!

I’m a big fan of chickpeas.

I use them in all kinds of recipes: soups, stews, curries, hummus…

their nutty rich flavor and the unique texture they add to dishes too.

And they are sooooooo good for us! 😉

On the Menu: Kasha and Beet Salad with Celery and Feta (with a twist) ;-)

Kasha and Beet Salad with Celery and Feta (page 92)

 

I made this oh, so yummy beet salad again yesterday (one of my all-time favs) 😉 this time with a slight variation.

I didn’t have any kasha, so I used black rice instead (ancient, organic variety). I’m a big fan of this type of rice, so good! 😉

I also used lots of  finely chopped fresh dill instead of parsley. It turned out great!

If you love beets, this is a recipe you won’t want to miss.

Perfect for adding to lunches, or as a side or vegetarian main dish. Would also be great for a potluck or buffet dinner.

On the Menu This Weekend ;-)


 I REALLY ♥ to cook, but sometimes it’s nice to have a day off from the kitchen, completely.

That’s where Joe comes in. 😉

When he’s home more on the weekends, he usually makes at least one supper and also a “mean” fry-up (yummm….) for Sunday morning breakfast.

I just sit back with my knitting needles on the couch and wait for my plate to arrive! 😉

This weekend, he’s going to be making Slow Cooker Sweet Potato Lasagna from one of my fav cookbooks:

I’ve got a  lot of typing to get through today so I needed something relatively fast to make for supper tonight. 

Haven’t had veggie burgers for a while so I’m making some of those (from the freezer) along with homemade:

Bread-Machine Rosemary Flax Buns (click for complete recipe)

to go with them.

That way, most of the work is done for me and not too much time in the kitchen required to complete these yummy buns. 😉

This is a popular recipe that was first featured in my cookbook: Not Just for Vegetarians. My “go to” recipe, for all kinds of buns, not just for burgers. Easily adaptable for vegans too. Hope you enjoy some soon!

I know a lot of you already have this cookbook and I hope you’ve enjoyed these particular recipes too! 

I had an abundance of peppers (this soup requires 2 large ones) and some leftover mashed potatoes (for the scones) in the fridge this morning, so this menu combo from the GGK came to mind.  Comfort food at it’s best.

Yummm…can’t wait!😉
