I ♥ beets sooooo much! 😉
I think beets are one of the most underrated vegetables in terms of versatility and taste.
Not to mention their health benefits, which are significant too and in a number of ways. It’s not just vitamin C that you’re getting in a serving of beets! You can read about some of the many nutritional pluses of eating beets and beet greens here.
Tonight I’m making a beet pesto with pasta recipe for the first time. Sounds and looks so yummy. It’s a recipe that I found recently in Alive Magazine. I also make a variety of beet salads on a regular basis and of course, my fav soup of all time:

I love beets too. This borscht is so good. The beet pesto and pasta was delicious too.
I’m delighted to find beets turning up in salad and on salad bars in restaurants.
I love fresh made Borscht (like the original Ukrainian recipes) as that area is where I have some of my own ancestry, so I like to make the soup with the fresh beets and a good cut of sirloin cooked and cut up in it, other veggies, sour cream to top it off. It is very good and wholesome. I also like grated fresh beets over a tosses spinach salad.
Fruit is good too, but I’m still more of a veggie fan overall, I LOVE veggies, all of them sooo much. Beets are close to the top of that list though. 😉 Hope you’re feeling a lot better Lorraine.

I thought the beet pesto was great too Joe. Very filling too. I’ll make that one again. The borscht too, of course. 😉
As long as they haven’t added some questionable “add ons” like sugar and loads of salt, I’m all for it too Patti. I gave up on salad bars quite a few years ago for the most part, after reading about some of the chemicals they were adding to some veggies to keep them looking fresh for longer periods of time. Hopefully, that’s been phased out since that time but it’s hard to know for sure. 😦
My mom always used a big ham bone with some meat on it, in her borscht, my grandma too. When I went vegetarian about 20 years ago (hard to believe it’s been that long) I took 3 of our old family recipes and made a redo, without any meat. Still love it and no loss for flavor, in my veggie redo. 🙂 I’ve never actually heard of anyone adding steak to borscht before Joyce. I like beets and spinach too, yumm.

Thank you better and better everyday I’m learning as I go along…I am def.. Lactose intolerant oh man oh but that Praline and Cream my neighbour gave me ah so good until I doubled in pain and spend most of my afternoon you know where, I’m learning things, I love Almond Milk it’s like a treat even sugarless and oh yum all kinds of things, I love carrots cooked in the microwave for a few minutes. I’m adding more fruits because for some weird reason there are very few veg I can eat. Carrots are ok so far…so I’m waiting until my soreness is gone and my stomach back in order and I will have different taste of vegetable to see what I can handle. I know corn is out of the questions but I did buy your groovy green kitchen so I check occasionally to see what I might try next, so thank you so much
I loove beets so much too, but i have never heard of beet soup. This is your favourite you say? Very interesting. I wish I could just have a taste before deciding to make it. LOL

It is indeed Sunshine and I love a LOT of different kinds of soups, this one is still #1. You will love it, if you like beets and veggies. Especially good with some homemade rye bread to go with. Yummm….
