It was wonderful to see the rain again ( complete with ‘light show’ ). And it rained and it rained…….so cool and refreshing.

It rained here yesterday too! It was cool and comfy FINALLY, but it’s still weird for us in SoCal to not have sunshine, especially in August.

I am curious, since i am allergic to eggs, do you think the meatloaf could have an egg substitute used? And also, is there a possible sub for the evaporated milk? Because i really want to try to make this, complete with the mashed potatoes…

Woke up this morning to 66*F and rain. After the raging flood waters we had in May, I never thought I’d be happy to see precipitation again, but this is just heavenly!!! Enjoy the day!
hooray! rain! That is a good thing. The heat is breaking here…slowly. But, we’ll be fond of these warm days come January, right? 🙂

About the meatloaf, this is really a recipe that works best as written, it is perfect, wonderful texture and taste and looks so nice with the potato ‘icing’. You could give it a whirl with egg sub. and creamer-type soy milk, that might work fine. Let me know how it goes and other recipe you try too.

Hi MaryAnne,Thanks for the compliment, its hard to take rain photos especially at night. Even the ones on Flickr aren’t great for the most part and there are a LOT of RAIN titled photos. I thought this one was kinda cool, even if not perfect. I liked the light beams too.

Hi K, Id use Silk Creamer (the kind for coffee) not just regular soy milk, to give a richer flavor. I love it in coffee, might work fine for this recipe too. G
